When it comes to Fit UV to 0-1 feature, that issue you mentioned was actually intended and fitting UV to 0-1 doesn't center in both U and V.
If you click Fit UV to 0-1, the patterns fit to 0-1, then they are aligned to the left or bottom side depending on the patterns. (Please refer to the images below.) However, you gave us some insight for improvement. We might add the Center to UV 0-1 option in the future according to your feedback. Thank you.
