It seems impossible to bake the back of a fabric, when it uses a different texture, correct?
Whatever during export or with dedicated tool in UV editor, I didn't find a way to bake anything than fabric Front.
The only way I could get textures for the Back is to not use Unified UV Coordinates during export.
Issue is, I, then, loose the Normal map for seamlines!
If anybody know a way to get it with unfified UV, I would be really interested!

The reason you can see front, back and side texture options in the fabric properties is to cater the rendering tools to our sister software CLO3D, in which fashion designers preview most often in image format and prototype presentation purposes when they render their projects out for their pipeline to create real life garments. A rendering engine which Marvelous Designer does not have. If you wanted to do this with only 1 shell with the face in 1 direction, I would recommend exporting your UV twice: once with the color on the front and another with the color you want on the flipped normal side. We will submit this as a feature request because I am sure that others would ask a similar question and I can see it being convenient for thick surface exports.
